Spicy Cauliflower Cheese Bake

1 1/2 cups cauliflower (3 green)
1/4 cup egg beaters (1/8 leanest)
1/2 cup 2% cottage cheese (1/3 leaner)
1/2 cup 2% skim shredded cheddar cheese (
3-6 grams fat/oz) (1/2 lean)
1/4 tsp Cayenne Pepper (1 condiment)


If using fresh cauliflower, you don't need to cook the cauliflower first.  If using frozen, cook the cauliflower in a microwave safe dish according to the directions on the bag. 

Chop the cauliflower into pieces about the size of pasta or pulse in food processor.  Mix together with egg beaters, cottage cheese,  cheddar cheese and cayenne pepper.

Bake at 350 degrees for 25-30 minutes.

This counts as 1 lean and green meal and 1 condiment.

I'm thinking about trying this soon...do you use uncooked cauliflower?
I have used fresh, uncooked cauliflower & frozen. When I made it from frozen, I did cook it first following the directions on the package. I am going to edit the recipe to include this info.

Kind of a silly question... Do you measure the cauliflower after it's chopped up? I used half the cauliflower, chopped it up, and that was 1.5 cups. It seemed like a lot, and I was worried I had too much.

Delicious...I thought I would miss having meat but not at all. Totally satisfying as a complete meal. I had to triple all the ingredients because of using a whole head of cauliflower, and that was very simply done. I only used 1/2 tsp. of cayenne pepper and it was quite spicy so next time I will only use 1/4 tsp. as you recommended for the individual serving. Thank you for the great recipes. I have tried several and loved them all. I will continue using them on my weight loss journey.

I made this tonight using shredded parmesan cheese in place of cheddar. It was fabulous! I might have to admit that I like cauliflower now. Thanks for the great recipe.
