New Medifast Recipe! Kinda Cadbury Creme Egg!

Spring is here and Easter is right around the corner! Now who doesn't love a Cadbury Creme Egg? They are one of my favorite candies ever. I saw people on the Medifast boards talking about Creme Eggs, so I decided to try my hand at making a Medifast friendly creme egg.

Without further ado....Here is my "Kinda Cadbury Creme Egg"!

Medifast Fudge:
1 packet Medifast Hot Cocoa
2 TB Water

Mix together 2 TB water & Hot Cocoa. Roll mixture into a ball and press out in a circle on wax paper.

Creme of Egg:
1 TB Light Cream Cheese
1 packet Splenda
1/2 TB Sugar Free Vanilla Syrup
1 TB PB2 or 1 TB Walden Farms Caramel (depending on the flavor of egg you want)

Mix all the Creme of Egg ingredients together until smooth.

To Assemble:
Spoon Cream of Egg filing onto the center Medifast fudge that you pressed out on the wax paper. Carefully pull the outside of the fudge around the filling.

Freeze for about 20 minutes.

This counts as 1 meal + condiments and possible a healthy fat and or snack. It depends on what type of cream cheese you use and if you make a caramel or peanut butter egg.

You can use this guide to add up the ingredients you used:
1 TB Low Fat Cream Cheese = 1 Condiment
1 TB Full Fat Cream Cheese = 1 Healthy Fat
1 packet Splenda = 1 condiment
1/2 TB SF Syrup = 1/2 condiment
1 TB Walden Farms Caramel = 1 condiment
1 TB PB2 = 1/2 snack

For how I made it, it would count as 1 Medifast meal, 2.5 condiments & 1/2 snack.

Unofficial Weigh In

So I am a daily weigher and my official weigh day is Sunday, but.....I am down 4.8 lbs since Sunday after getting back on track with 5 and 1 plan! That brings me to 75.4 lbs lost total since September 20, 2010 - that is over 75 lbs is just under 6 months.  The 5 and 1 plan really works!!!

I am loving my Android phone too! I found an free app called Calorie Counter by MyFitnessPal that includes a bar scanner.  So you can just scan the bar code of whatever you are eating and it adds it to your food tracker.  Pretty cool!

Back on the 5 and 1 Plan and feeling great!

So this past weekend was rough for me.  Stillman's wasn't a very good idea, as it was far too restrictive.  I didn't see any weight loss with it either.  The 5 and 1 plan is what really works well for me!

I ended up quitting Stillman's on Friday and derailed big time when out to dinner with my husband.  I ate garlic bread and spinach artichoke dip on Friday night!  It tasted great (of course) but I felt so full and bloated, I had to unbutton my jeans on the ride home.  Not a good sign.  I weighed in the next day and was at 241 lbs.  I decided to re-commit to the 5 and 1 plan on Saturday and that mostly went okay.  I did end up eating 1 extra meal replacement and 1 extra lean & green meal.  It brought my calories to about 1300, but my carbs stayed at 85.  However, as of Sunday I am 100% back on the 5 and 1 plan.  I am back down to 237.2 lbs today, so I am nearly back to where I was before starting Stillman's diet.

No more messing around for me!  I am sticking to the 5 and 1 plan so I can lose this last 57 lbs!  Also, I stopped working out for now to see if that picks my weight loss back up.  My husband pointed out that I stopped losing when I starting working out.  Maybe it is still too much of a caloric expenditure for my body to add working out.  When I get to 180 lbs, my doctor and I are going to re-evaluate my goal.  I want to get a new body composition test done and see exactly how many calories I need to be eating and exactly what I should weigh.

The 2nd Biggest Loser contest at work is ending tomorrow.  I am winning with 6.12% weight loss.  The person behind me has 3.8% weight loss, so I think I will win this.  Wish me luck!

Once I hit 235 lbs, I will be taking me progress photos to show 75 lbs lost.  I am very excited for that!

Low Carb Peanut Butter Bars

Here is a very easy recipe for very tasty peanut butter bars!

9 scoops Biochem Sports 100% Whey Protein Powder Vanilla
1/2 cup Once Again Organic Peanut Butter
8 TB PB2 (Powdered Peanut Butter)
1/4 cup Splenda
4 TB Bob's Red Mill Flax Seed Meal
1/2 cup water

Add water slowly and mix all ingredients together. You may need to adjust the water up or down, depending on the consistency of the bars.  Roll each protein bar into a 45 gram ball and press out flat.  I pressed a mashed potato masher on the top to get the little squares on top.

Store with wax paper between each bar.

Number of Servings: 12

Calories 130, Carbs 9g, Fat 6g, Protein 12g

Hot Chicken Soup

Here is a super easy recipe for some pretty spicy chicken soup!

1 cup chicken broth
4 oz diced grilled chicken breast
1 tsp Sriracha Hot Sauce
1 wedge Laughing Cow Light Cheese

Heat up chicken broth and add grilled chicken, Sriracha hot sauce and Laughing Cow Light Cheese. Stir and enjoy!

Calories 175, Carbs 3g, Fat 4g, Protein 30g

New toys, frustrated about plateau, quitting diet soda & new recipe for Low Carb Honey Dijon Dressing!

Sorry I haven't posted in a while! Things have been a bit hectic around the office and home these past weeks. We moved into a new office and lots of techy IT stuff going on. I did get an XBOX 360 & Kinect this weekend. For the Kinect I have Adventures & Sports. I downloaded the demo for Biggest Loser & the Dance game. I enjoy the 360 & Kinect so much more then my Wii. I don't think I will buy the Biggest Loser game, I will opt for EA Sports 2. The EA Sports 2 game is only $39.99 at Target and comes with a heart rate monitor & resistance bands. The Dance game is super fun too, but I officially have no rhythm at all!

I want to give an update on my status with weight loss. I think I have hit a plateau because I haven't lost much at all this month and it isn't coming off in inches either. I am stuck at 237-238 lbs! I have lost 72-73 lbs and I think my body doesn't want me to hit 75 lbs lost because it knows another progress photo shot will be coming. Joking of course....

I have been asking around, reading different plateau theories and decided to go super low carb for 2 weeks to try to break the plateau. I am following the old school Stillman's Quick Weight Loss diet. Stillman's QWL diet is pretty much the original low carb diet dating back to the 60's. I eat lean meat, low fat cheese and eggs. It is low calorie, low carb and low fat. Of course it isn't healthy to not eat veggies, but I am only doing it from 3/6-3/19. I did buy some ketostix and I register in mild ketosis. More to come as my 2 weeks progress.

I am also quitting diet soda. I strongly suspect that my consumption on diet soda is playing a part in my plateau. I have read theories about how aspartame can cause some people to stall. Today is my first day of no diet soda and I have a headache. I have still been drinking coffee & lots of water, so it must be something in the soda.

Kroger CARBmaster Yogurt

My mom found a great meal replacement - Kroger CARBmaster yogurt!  They taste really good and are only $0.41 a piece!  The nutrition values are different depending on which flavor you get.  You could even count 2 yogurts as 1 meal.  Or eat just 1 for a meal if you need to balance out a higher calories item, like a homemade bar.

80 calories, 1.5 g fat, 3 g carbs, 12 g protein
Peach, Strawberry Banana, Blackberry, Cherry

60 calories, 1.5 g fat, 4 g carbs, 9 g protein
Strawberry Colada, Raspberry Yumberry, Vanilla, Vanilla Chai, Carrot Cake
