I am back....in a BIG way!

3rd time is a charm? I certainly hope so.

As of 12/26/2013 I am back on the Medifast diet.  This now marks 3 times I have gained "the weight".  And this third time I am starting 10 lbs heavier then my original starting weight.  I thought I would be sadder about it, but I am really not.  I have a strange sense of peace about it all.  I know what works to lose weight, I know why I regained weight.  I just have to make up my mind that I am worth doing it again over. If I have said it once, I have said it a thousand times...no diet, surgery, workout plan or change any other change of lifestyle works if you go back to your old habits & way of eating. If you eat again in the same way that made you fat, guess what? You will get fat again.

Here is a bit of my history, if you aren't familiar with my story:

Round 1
In September of 2010, I started Medifast for the first time. I was doing Medifast 5&1 diet alone, with the support of Take Shape for Life.  From September 2010 until March 2011, I had lost 75 lbs.  I started at 310 lbs and ended, still 60 lbs from goal at 235 lbs.

Round 2 
By March of 2012, I had regained 55 lbs, weighing in at 290 lbs.  Being very scared of hitting the big 3, I started Medifast again in March 2012.  By September of 2012, I had lost 60 lbs, bringing my lowest weight to 230 lbs. Still 55 lbs from goal.

Round 3
In December 2013, I crossed the line into the big 3 again.  As of Christmas, I weigh 320 lbs. That is 10 lbs higher then my Round 1 starting weight.  I am now 145 lbs above my goal weight.  I have to start over 

My husband cracks me up. With a sorrowful face I was just telling him the stats and he said "Now is your chance to show everyone how awesome you are. You can be like Rocky and come back even stronger!"

Cauliflower Tortillas

This recipe is inspired from: http://slimpalate.com/cauliflower-tortillas-paleo-grain-free-gluten-free/

1.5 cups Cauliflower (cooked)
1/2 cup of Eggbeaters

Preheat oven to 375 degrees.

I used frozen Cauliflower for this and cooked it in the microwave using the directions on the bag.
Squeeze out any water by squeezing using a paper towel.
Using a food processor, blend together the cauliflower and Egg Beaters.
Line cookie sheet with parchment paper or foil/parchment combo paper.
Scoop out to make 4 tortillas.
Bake for 15 minutes, then flip and bake for another 10 minutes.

Enjoy!

Shepherd's Pie




8 oz uncooked 96% extra lean ground beef (yields 6 oz)
6 large eggs
4 oz moderate fat cheese, shredded
1 12 oz bag of frozen Cauliflower (yields 322 g cooked)
1 14.5 oz can french cut canned green beans (yields 248 g)
169 g raw portobello mushrooms (yields 103 g cooked)
1 packet Medifast Gravy
1 TB Montreal Steak Seasoning

Preheat oven to 350 degrees.

Cooked frozen cauliflower in microwave per the directions on the bag. Add cooked cauliflower to food processor.  Add 6 eggs.  Blend until smooth. Weigh on food scale and divide by 6.

Pan fry ground beef and add Montreal steak seasoning. Weigh on food scale and divide by 6.

Cook portabello mushrooms on countertop grill for about 5-7 minutes.  Dice mushrooms. Weigh on food scale and divide by 6.

Drain can of green beans in strainer. Weigh on food scale and divide by 6.

Mix 1 packet of Medifast gravy with 1 cup of water.  Weigh on food scale and divide by 6.

To assemble:
It is easiest to put each dish on a food scale and weigh it as you go using your measurements from above.  Add 2 oz of ground beef to oven safe dish. Add 1/6 of diced portobello mushrooms to each dish.  Add 1/6 of green beans to each dish.  Add 1/6 of gravy to each dish. Top with 1/6 of cauliflower/egg mixture.

Bake in oven for 20-25 minutes or until cauliflower topping is golden.

Add .66 oz of moderate fat cheese to each and bake for another 5 minutes or until the cheese is melted.

Let cool for about 10-15 minutes.

To reheat, bake in 350 degree oven for about 10-15 minutes.

Each dish counts for 1 lean, 1.5 green and 3 condiments.

215 calories, 9 g carbs, 11 g fat, 25 g protein.

Chicken Curry Ravioli

Inspired by this blog I made a single serving, low carb ravioli!


50 grams of raw zucchini, sliced
3 oz shredded cooked chicken
1 oz low fat cream cheese
1/2 tsp yellow curry powder

For the filling, use 3 ounces of cooked shredded chicken (I used leftover rotisserie chicken for this) and add 1 tsp of curry powder.  Mix in 1 ounce of cream cheese.  Form the filling into a 4 balls and then shape into squares. 

To make the ravioli, slice the zucchini length wise with a vegetable peeler making long wide strips.  Lay 2 strips next to each other vertically. Lay 2 more strips horizontally on the vertical strips. It will look like a t.  Place 1 square of filling in the center and fold over the zucchini to cover the ravioli.  Repeat and make 4 raviolis.  

On a heated counter grill, grill the raviolis for about 5 minutes until golden.

This entire recipe makes 4 raviolis and counts for 1 green, 1/2 leaner, 3 condiments. If you use full fat cream cheese instead of low fat, this recipe would count for 1 green, 1/2 leaner, 1 condiment and 1 healthy fat.

260 calories, 4 g carbs, 15 g fat, 25 g protein.  This is factored using rotisserie  chicken.  The calories and fat would be lower using boneless skinless skin breast.

Medifast Meal Crackers



1 packet of Medifast Chicken Noodle Soup
2 TB water

Preheat oven to 350. Using a Magic Bullet or small food processor, blend the dry soup until it is smooth.  Add 2 TB of water and blend until well mixed.  Roll out dough thin and cut with your favorite cookie cutter.  Take the left over dough, roll again and cut again with cookie cutter until all dough is formed.  Bake for 15 minutes.  Let cool.

This recipe makes 1 Medifast meal.  In the pictures, I was able to yield 3 crackers per meal.  This will vary depending on the size of your cookie cutter and the thickness of your dough.

Broccoli Spinach Crepes


Crepe:
1 Medifast Cream of Broccoli Soup
1/2 cup Egg Beaters (1/8 leanest)
1/4 tsp baking powder (1/2 condiment)
1/4 cup water

Filling:
1/2 cup 1% cottage cheese (1/3 leanest)
1/2 cup frozen cooked chop spinach (1 green)
1.5 TB low fat cream cheese (1.5 condiments)

Mix Cream of Broccoli soup packet, Egg Beaters, water & baking powder together.  Pour thinly into heated non-stick pan. Cook for 2-3 minutes or until edges are browned and flip.  Repeat until all batter is cooked.  I was able to make 6 crepes.

In a Blender, mix together cottage cheese, cream cheese & spinach. Blend until smooth.  Add filling to crepes and roll.

This entire recipe counts for 1 Medifast meal, 1/2 leanest, 1 green & 2 condiments.

Chai Blintzes


Crepes:
1 Medifast Chai packet (1 Medifast Meal)
*You could use any Medifast drink or shake
1/2 cup Egg Beaters (1/4 Leanest)
1/4 cup water
2 tsp or 1 packet of Splenda (1 condiment)
1/4 tsp baking powder (1/2 condiment)

Filling:
1/2 cup 1% Cottage Cheese (1/3 Leanest)
2 tsp or 1 packet of Splenda (1 condiment)

Mix Chai packet, Egg Beaters, water, 1 packet Splenda & baking powder together.  Pour into heated non-stick pan.

Cook for 2-3 minutes or until edges are browned and flip.  Repeat until all batter is cooked.  I was able to make 4 crepes.

In a Blender, mix together 1 packet of Splenda and cottage cheese. Blend until smooth.

I was able to make 4 crepes from my batter.

Fill each crepe is 1/4 of the filing.

Roll crepes and enjoy!


This entire recipe (4 crepes) counts for 1 Medifast meal, 2/3 Leanest and 2.5 condiments

How to Make Medifast McMuffin

You will need:
3 Brownie Trays (or other any container)
1 Medifast Pancake (any flavor)
1/4 cup Egg Beaters (1/8 Leanest)
1 Morningstar Farm Sausage Patty (1/3 Leaner)

Spray 3 trays with non-stick cooking spray

Add 1/4 cup Egg Beaters
Microwave for 2 minutes

Mix 1 Medifast Pancake (I used Chocolate Chip) with 1/4 cup water
Divide evenly between 2 trays
Microwave for 2 minutes

Cook Morningstar Farm Sausage Patty as directed.

Combine & Enjoy!

This counts for 1 Medifast Meal and 1/2 Leaner


How to Make Medifast Peanut Butter Cup

You will need:
1 Medifast Hot cocoa
2 TB PB2
*PB2 is a powdered peanut butter. Here is their website, but I found it at my local Kroger grocery store
Water

In 2 trays:
Mix 2 TB of water with Hot cocoa to make "dough"
Mix 1 TB of water with 2 TB of PB2 Powder

In 3rd tray:
Spread 1/2 of Hot cocoa "dough"
Spread PB2 spread
Spread remaining Hot cocoa "dough"

Freeze for 1 hour

Enjoy!

This counts for 1 Medifast Meal and 1 optional snack

Easy Slow Cooker Orange Chicken



20 ounces frozen uncooked boneless skinless chicken breast (3 Leaner)
*yielded 3 6 oz servings for me
12 tsp light soy sauce (6 condiments)
2 cans diet orange soda

Place frozen chicken in slow cooker.  Add soy sauce and soda.  Cook on low for 5 - 6 hours

This entire recipes makes 3 Leaner servings.

Each servings counts for:
1 leaner, 2 condiments
225 calories, 3 g carbs, 6 g fat, 39 g protein

Cheesy Stuffed Eggplant







1 Eggplant (486 grams whole, cooked to 150 grams) (3 green)
1.5 cups diced tomatoes (I used Rotel but any diced tomatoes would work) (3 green)
8 ounces low fat mozzarella cheese (2 lean)
1 tsp Marjoram Leaves (1 condiment)
1/2 tsp Garlic Salt (1 condiment)
1 tsp Thyme (1 condiment)
1/2 tsp black pepper (1 condiment)
4 TB no-sugar Spaghetti Sauce (2 condiments)


My eggplant started weighting 486 grams.  Cut off both ends and cut in half. Scoop out the insides and dice them into 1/2 inch pieces.  Save the skins to use as a boat.

Preheat oven to 375 degrees. Spray an 8x8 casserole dish with non-stick cooking spray. Place Eggplant boats in dish.  Set aside.

Add marjoram, garlic salt, thyme & pepper to a 10" skillet with the diced eggplant.  Cook until tender. About 5-7 minutes.  Measure the cooked eggplant. You only want to use 150 grams, cooked weight.  Add back to skillet and add 1.5 cups of diced tomatoes.  I only had Rotel on hand, but any diced tomoatoes would work.  Cook together for 2-3 minutes.

Divide the eggplant mixture evenly between the 2 Eggplant boats.  Top each with 4 ounces of low fat mozzarella cheese.

Bake at 375 for 20 minutes or until cheese bubbles.  Remove from oven and top with 2 TB of no-sugar Spaghetti Sauce.

This entire recipe is 2 servings.  Each serving is 1 lean, 3 green and 3 condiments.

Chocolate Chip Cakes

*It has come to my attention that you should only eat your healthy fat with your lean serving.  This recipe does use a healthy fat (flax seed) in the recipe, so technically that is not permissible.   Please use all recipes at your own risk & contact your health coach or Medifast Nutrition Support if you have any questions or concerns on how to incorporate your healthy fat*



2 packets Medifast Brownies  (2 Medifast Meals)
2 packets Chocolate Chip Pancakes (2 Medifast Meals)
2 TB golden ground flax seed (1 healthy fat)
1/2 tsp baking powder (1 condiment)
1/2 cup water

Preheat oven to 350 degrees.  Combine all ingredients and bake in Brownie trays for 18 minutes.

This makes a total of 4 Medifast meals, 1 cake per meal.
Each meal has 1/4 healthy fat & 1/4 condiments.

Mini Pizzas on Zucchini Cauliflower Crust

I was going to make faux latkes, but they turned into mini pizzas instead.  My new favorite pizza crust recipe.  No cheese in the crust and zucchini is added!


1/2 cup shredded zucchini (1 green)
1 cup pureed cauliflower (2 green)
2 TB golden ground flax seed (1 healthy fat)
4 egg whites (about 1/4 leanest)
4 TB Rao's Homemade - Arrabbiata Fra Diavolo Sauce (or other low carb spaghetti sauce, this one has 4g carbs per 1/2 cup)  (2 condiments)
1/2 cup  of Jimmy Dean - Turkey Sausage Crumbles (1/3 lean)
2 oz moderate fat cheese (1/2 lean)

Preheat oven to 425 degrees. Line cookie sheet with tin foil and spray lightly with non-stick cooking spray.

Shred 1/2 cup of zucchini in food processor or using hand grater.  Puree 1 cup of cooked cauliflower.  For the cauliflower, I just use frozen cauliflower and cook in the microwave per the directions on the bag.  Mix zucchini, cauliflower, flax seed, and egg whites together in a bowl.

Divide into 4 crusts. Bake for 20 minutes or until golden, then flip each crust and bake for another 10-15 minutes.  Top each crust with 1 TB of sauce, 1/2 ounce of cheese and divide the sausage evenly among each crust.  Bake for another 2-3 minutes or until cheese is melted.

This entire recipe, all 4 pizzas, count for:
3 green, 1 lean, 1 healthy fat, 2 condiments





Spicy Tuna Slaw



Spicy Tuna Slaw, but this will never photograph well :)


2 cups of raw cabbage (cooks to 1.5 cups) (3 green)
1 can of light tuna, 7 oz.  (I used Chicken of the Sea Light Tuna, canned in water) (1 leanest)
2 tsp light soy sauce (1 condiment)
2 TB of hot pepper sauce (I used Sriracha) (1 condiment)
1 packet of Splenda (1 condiment)
2 wedges of Laughing Cow Light (1 healthy fat)

In a 10" frying pan, add raw cabbage, hot sauce and soy sauce.  Cook until cabbage is starting to get soft, about 5 minutes.  Add drained tuna and Splenda.  Cook for another 5 minutes.  Add Laughing Cow wedges.  Continue cooking for another 3-5 minutes.  Stir all together in a bowl.

This entire meal counts for 3 green, 1 leanest, 3 conidments and 1 healthy fat.  
*1 additional healthy fat should be consumed since tuna is the leanest.  I really like adding Golden Ground Flax Seed to my pancakes for an additional healthy fat!

300 calories, 15 g carbs, 5 g fat, 47 g protein

Buffalo Chicken Dip

This dish was inspired by Sandy's Creamy Buffalo Chicken Bake.  I have been on a super fast & super easy Lean & Green kick, so I modified it for a great way to use rotisserie chicken or left over chicken.  This will take you literally less than 10 minutes to make!



6 oz of cooked chicken breast (1 Leaner)
2 wedges of Laughing Cow Light (1 Healthy Fat)
1 TB Frank's Hot Sauce (1 condiment)
225 grams (1.5 cups) of Celery

Dice or shred cooked chicken and mix in laughing cow cheese and Frank's Hot Sauce.  Mix until blended.  Heat for 2 minutes in microwave.

Serve with celery sticks.

This entire recipe is 1 leaner, 3 green, 1 condiment and 1 healthy fat.

275 calories*, 7 g carbs, 5 g fat, 44 g protein
*Calories will vary depending on what type of chicken you use. This is factored using white meat boneless skinless grilled chicken


This is what I bought from Costco for this meal, I had the Frank's Hot Sauce already!
The dogs sure enjoyed the skin & fat from the rotisserie chicken!




Blissful Sloppy Joe

*This recipe was modified on 2/06/2013 to reflect the most current Medifast guidelines*

My friend Courtney came up with this awesome recipe for the Sloppy Joe.  I am not a pickle fan, but this is seriously tasty!!

1 packet Medifast Sloppy Joe (1 Medifast Meal)
1/4 dill pickle slice, diced (1/2 Optional Snack)
1 wedge of Laughing Cow Light Cheese (1 condiment)
1 tsp yellow mustard (1 condiment)

In a microwave safe bowl, mix 1 packet of Medifast Sloppy Joe with 4 ounces of water. Microwave for 2 minutes.  Add diced dill pickle and Laughing Cow cheese and mustard.  Microwave for 1 minute.  Stir and enjoy!

This entire recipe counts for 1 Medifast Meal, 1/2 Optional Snack, 2 condiments.

Tara's Orange Creme Crepes

My friend Tara just sent me pictures of the crepes she made and they look amazing! I want to share her recipe with everyone!








1 Medifast Orange Creme Shake
1 Medifast Scrambled Eggs
1/4 tsp baking powder
1/2 - 1 cup water
1 TB low fat cream cheese

Heat a small non-stick skillet. Pour enough batter to coat the bottom of the pan. cook over a medium heat until the crepe starts to bubble. Turn the crepe over using a silicon spatula and cook the other side for one minute. You can use 1 TB of low fat cream cheese.

This recipe made 6-8 crepes total which is 2 meals, 1/2 condiment for the baking powder.  Each 1 TB serving of low-fat cream cheese you use also counts as 1 condiment.



Iced Mochachino Disco Style!

1 package of  Medifast Hot Cocoa
8-10 oz Caramel Vanilla Creme by Green Mountain K-cup brewed coffee
*Any flavor or non-flavored coffee would work too
Ice

I love, love, love my Keurig machine but if you don't have one, feel free to use 8-10 ounces of any coffee.

Here is my method:
1. Brew 10 ounces of Caramel Vanilla Creme by Green Mountain K-cup coffee into my Take Shape for Life Blender Bottle.

2. Refrigerate until cold.  If you shake up the Hot Cocoa while the coffee is still hot, it can and likely will explode!

3. Once the coffee is cold, pour in 1 package of Medifast Hot Cocoa.

4. Turn on some KC and the Sunshine Band and Shake, Shake, Shake!!!!

5. Pour ice into the Blender Bottle, close the top again and shake some more!

6. Enjoy!!




Deviled Egg Salad


3 Hard Boiled Eggs
1 TB Walden Farms Mayo
1 tsp mustard
Sprinkle of paprika

Dice up hard boiled eggs and mix together with mayo and mustard.  You can serve over lettuce leaves, spread on cucumber slices or enjoy on it's own!  Sprinkle a little paprika at the end!

This recipe counts for 1 lean and 1 1/3 condiment.

Egg Nog


1 Medifast Scrambled Eggs
1 Medifast Vanilla Shake
8 oz water
1/2 teaspoon cinnamon or nutmeg
1 teaspoon rum or vanilla extract
1 packets Splenda

Put all ingredients except cinnamon into blender. Mix ingredients for 2-3 minutes or until smooth. Sprinkle ½ teaspoon of cinnamon or nutmeg on top of each drink Garnish with a cinnamon stick of desired and serve as 2 meals. 

This entire recipe counts for 2 Medifast meals and 3 condiments.

Crepes


1 Medifast Vanilla Shake
1 Medifast Scrambled Eggs
1/4 tsp baking powder
1 tsp Vanilla
Water – just enough to get a thin pancake-batter like consistency

Heat a small non-stick skillet. Pour enough batter to coat the bottom of the pan. cook over a medium heat until the crepe starts to bubble. Turn the crepe over using a silicon spatula and cook the other side for one minute.  Divide in 2 meals.  

This entire recipe counts for 2 meals and 1.5 condiments.

Cheeseburger Hamburger Helper

1 package Medifast Vegetarian Sloppy Joe
1 package Medifast Mac & Cheese
1/2 cup of water

Combine the Sloppy Joe and Mac & Cheese into a microwave safe bowl.  Add 1/2 cup of water and mix together.  Microwave for 2 minutes.  You may need to add 1/4-1/2 more water, depending on how watery it is.  Microwave for another 2 minutes.  Let set for 3-4 minutes. Divide in 2 and enjoy!

Cheesy Meatball Sub




6 Market Pantry Turkey Meatballs (Sold at Target) - 1/2 Lean
1 oz Mozzarella & Parmesan Shredded Cheese - 1/4 Lean
2 Romaine Lettuce Heart Leaves - 1/2 Green
1/2 cup shredded iceberg lettuce - 1/2 Green
1/4 cup Rao's Homemade - Arrabbiata Fra Diavolo Sauce (Sold at Target) - 2 condiments

Heat 6 meatballs in a microwave safe container for 1 minute 30 seconds. Add tomato sauce and heat for another 30 seconds - 1 minute. Lay 2 Romaine lettuce hearts on a plate.  Add 1/4 cup of shredded iceberg lettuce to each Romaine leaf.  Top each leaf with 3 meatballs and sauce.  Top with cheese.  Enjoy!

The Medifast Lean & Green exchange for this recipe is:
3/4 Lean, 1 Green, 2 Condiments
**Since this isn't a complete Lean & Green meal, you could enjoy a 2 cup lettuce salad with 1.5 oz of chicken breast, as an example.
