Broccoli Spinach Crepes


Crepe:
1 Medifast Cream of Broccoli Soup
1/2 cup Egg Beaters (1/8 leanest)
1/4 tsp baking powder (1/2 condiment)
1/4 cup water

Filling:
1/2 cup 1% cottage cheese (1/3 leanest)
1/2 cup frozen cooked chop spinach (1 green)
1.5 TB low fat cream cheese (1.5 condiments)

Mix Cream of Broccoli soup packet, Egg Beaters, water & baking powder together.  Pour thinly into heated non-stick pan. Cook for 2-3 minutes or until edges are browned and flip.  Repeat until all batter is cooked.  I was able to make 6 crepes.

In a Blender, mix together cottage cheese, cream cheese & spinach. Blend until smooth.  Add filling to crepes and roll.

This entire recipe counts for 1 Medifast meal, 1/2 leanest, 1 green & 2 condiments.

Have you made this with other vegetables like broccoli..
