Get Ready for the 90 Day Challenge starting 4/1!!

Starting on April 1st, I am starting a 90 day health challenge!

What is your goal?
-Do you want to lose weight?
-Do you want to be able to run a 5k?
-Do you want to want to complete a program like Insanity or P90X?

Let's see what we can accomplish in 90 days!

My goal is to lose 25 lbs for the 90 day challenge.  I plan to do this by drinking a Body by Vi shake (they taste like cake batter, seriously good!), eating Kay's Naturals products for snacks and eating a lite & healthy lunch and dinner.

Will you join me in accomplishing a health goal in 90 days?

Perfect Black Bean Banana Fudge Brownies

As you may know from my mom and I's new blog, I Refuse to Eat Cardboard, I am trying to use healthy foods in a new way.  I have wanted to make the perfect healthy brownies.  After 3 batches, these are perfect!!!


    3 cups black beans 
    3 bananas 
    2/3 c pure maple syrup 
    1/2 c unsweetened cocoa 
    2 tsp vanilla extract 
    1/2 c sugar 
    1/2 c oatmeal


Preheat oven to 350 F. Grease an 7x11" pan and set aside. Combine all ingredients except oats, in a food processor or blender and blend until smooth, scrapping sides as needed. Stir in the oats and pour batter into the pan. Bake approximately 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.

Best Cauliflower Crust Ever.

I am a big fan of looking at ways to use cauliflower in a new way. Cauliflower is like the Swiss Army knife of a low carb diet.  I have done pizza crust many times, but I wanted to try something without cheese.

Here it is....the best cauliflower crust I have had to date.

1 head of cauliflower
1/2 cup Egg Beaters
3/4 cup Almond Flour

Preheat oven to 450 degrees F. Add cauliflower to a food processor and pulse until the cauliflower appears riced.

Transfer riced cauliflower to a large bowl, and add almond flour and egg beaters. Stir well. Using a silicone baking sheet or parchment paper, spread mixture on the pan using a spatula.

Bake crust for 25 minutes. When the crust is golden brown and crispy on the ends, remove from the oven.
