What I Have Been Eating

***I have already received criticism about my plan from people and it does effect me emotionally.  I ask that you keep criticism about my diet to yourself, I really do not want to emotionally deal with negativity about what I ate.  I am hesitant to share my menu for fear of this.  Please know that this is what worked for me and it may or may not work for you.  We each have different metabolisms and handle carbs and fat differently.***

I was asked by several people to put together a menu of how I ate for the past 10 days to lose 20 lbs.  I went ahead included 11 days.  Let me say that when I started I had been trying to due the Medifast diet which is very low calorie, moderate carb and low fat.  This was a bit of a transition period towards low carb and high fat.  Please do not take this as suggestions of what you should eat, only record of what I ate.  I was not perfect by any means and made mistakes with food.

My goal is to have a max of 1800 calories with 20% carbs, 30% protein and 50% fat.  Some days I did horrible and some says I did great.  I am averaging pretty close, as you can see below in the averages for the 11 days.

20 lbs lost in 10 days on low carb high fat diet!

I have been healthy eating and mainly following a low carb diet since 6/17. Update! I have lost 20 lbs! Here is my first progress photo. When I bought this dress it was too snug and I wore a tank over it. Now it fits perfect!  Not bad for 10 days eating low carb!!  My macronutrients are targeted to 20% carbs, 30% protein and 50% fat.

And here is the recent advice from my wellness coach:

Always remember though, "Eat to live, not live to eat". Food is only here to sustain us and the fact that you really enjoy food means the 12 conglomerates that own every food company in the country have put one over on you and you are reacting exactly the way they want you to react; with addiction and withdrawal. These companies don't care about you, they only care about their bottom line and the best way to make money is to put in all sorts of crap like MSG and sugars to keep you buying more. They don't expect people to wake up and realize they are victims.
You are not a victim though, and I say that calmly and confidently. These food companies have turned your own taste buds against you, but your body belongs to you and you can simply just take it back! Like any other addiction, junk food has withdrawal symptoms but they are only temporary. If you make it through then your body will know better than to waste your time craving things it knows you're not going to give it.
I do have to also say that I was very proud of myself.  I was in a meeting at work and I passed on the soda, cookies and fruit.  This is what I ate:

Bulletproof Latte

2 scoops Biochem Vanilla Whey Protein
1 TB Coconut Oil
1 tsp organic grassfed butter
Sprinkle of cinnamon
10 oz of hot coffee

Blend together in blender and enjoy!
275 cal, 6 g carbs, 25 g fat, 20 g protein

It's a Zen Life for Me!

Life has been very good lately! Work is going well, candle business is thriving and I have been having a blast with my nephews living here.  I am happy to report that my brother and his wife are all setup at their new home and are ready for the boys to come back and live with them.  My time (10 months) as full-time auntie to the wonderful Rylan (5), Aerion (3) and Phoenix (22 months) is nearing an end in just a couple of short weeks.  I am very excited for my brother and his wife and their family, but I am sad because those boys have been my joy for the past 10 months.

So this is a time of change for me.  The reality is that I have spent so much time taking care of other people the past 10 months, I have not been taking care of myself.  Diet habits and exercise have slipped big time.  My initial reaction was to jump back on Medifast, which is a great diet.  But I don't want a diet, I want to move to the next phase of Cody...if that makes sense.  I lost 75 lbs in about 6 months on Medifast and didn't even work out.  I was thinner but I was not fit yet.  I live in the most beautiful state, Colorado, and I have never even climbed a 14'er or went skiing.  Even smaller, fitness held me back.  Secretly, I even long to do crossfit.  So this next stage of myself isn't focused on just being thinner, however that will be an awesome benefit, but I want to be an active and healthy person.  This will allow me to serve my God better, be a better wife, be a better employee and overall be a better version of myself.  

One of the fruits of the spirit is self control and this is something that I have not been manifesting - and very obviously.  I truly believe that God won't tell you to do something without giving you the tools to do it.  Sometimes he puts the right person in your life at the right time to help you with your journey.  My time at Take Shape for Life has shown me how important it is to have the support of a Health Coach.  Since I want an overall wellness approach, I am starting with a wellness coach.  I will be given a goal for something diet related, exercise related and one mental related.  Here are my first 3 goals I was given to start with:

1. No carbonated drinks.
2. I want you to stretch in the morning after you wake up, and again at night before you go to bed. You don't have to spend 20 minutes stretching, just stretch as much as you can. You're not going to believe how great you feel after a week of this.
3. Time to change your perception of yourself. From now on, you are an active and healthy person who is just recovering from some down time. Envision yourself being one of those athletic types when you work out. Take the stairs and never the elevator, and feel and enjoy each step. You are no longer someone who is struggling. You are someone with goals that you WILL reach, because you know you can. Because you are young and have the power to transform yourself.

I also got a FitBit One, so I will be using that as motivation to be more active.  FitBit sets a goal of 10 flights a day of stairs and I FAR exceed that.  Guess that is natural when you live in a 2 story house with 3 kids and your office is in the basement.  Though I don't take nearly as many steps as I should.  I work in IT so most of my day is spent in front of the computer.  Candle making is no big caloric expenditure either.  But I am working on small steps.  I am very much an all or nothing type person, so I am so tempted to want to go all workout crazy and do everything that I eventually want to be doing.  But I am trusting my wellness coach and when it is time for me to add to my goals.  I have a strong tendency to want to control EVERYTHING and over-engineer plans.  It is very odd and somewhat freeing to just follow someone else's plan and not add my own spin to it all.

Happy Valentines Day Muffins

Happy Valentines Day!

2 packs of Medifast Brownie mix
2 packs of Medifast Cherry Pomegranate Shake Mix
1 tsp baking powder
1/4 cup egg beaters
2 TB cream cheese

Mix all together and just add enough water so it has a cake batter consistency. Bake for 20 minutes at 350.  This makes 4 meals, but my heart muffin pan makes 6 it make be best to eat 1 and 1/2 muffin for each meal.

This counts as 4 Medifast meals, 2 healthy fats, 2 condiments, 1/4 leanest.

Mango Lassi Smoothie

*Note this is NOT a Medifast recipe*

1 mango (270 grams)
1/2 cup yogurt, plain
1 scoop Amazing Grass Green Superfood, chocolate
1 tsp vanilla
1 handful spinach (50 grams)
1 banana (100 grams)
1 TB chai seeds
4 packets Stevia
1 cup filtered water

Place all ingredients in to a blender and blend.  Serves 2.

250 calories, 50 g carbs, 6 g fat, 8 g protein, 8 g fiber.

10 Day Smoothie Challenge!

So very long story short......I can't do this yo-yo of weight loss anymore and for whatever reason, I can't get my head into the Medifast mindset to stay on it.  So, I am back off Medifast and am going to be focusing on eating more whole, organic foods.  My husband and I want to have a baby, so we are looking into a great "Fertility Diet" that mainly focuses on eating organic foods, limiting dairy, limiting soy and eating whole foods.

I am doing a 10 Day Smoothie Challenge, as a way to ease myself in.

My smoothie for the day is a Peach Smoothie.  Here is the recipe.  It tastes great!!

Also, I discovered a great drink by Evolution Fresh called Essential Greens with Lime Juice.  Normally they are about $5 a bottle, but I got them on special at my grocery store for only $2.29!  It is a cold pressed juice, not from concentrate.  Seems like a great way to help get in more veggies.  That is until I buy a juicer!

Please also note that I have added a "Healthy Living Recipes" section to my blog.  These are where I am going to share healthy recipes that are NOT approved for Medifast weight loss phase.  I will also put a note at the top of each recipe saying it is not a Medifast recipe, to hopefully avoid confusion from Medifast dieters.

Peach Smoothie

*Note this is NOT a Medifast recipe*

This is a great smoothie that is loaded with all kinds of nutrients to get your day off to a good start.  Since it is high in protein and fiber, you will stay full long into the morning.

Peach Smoothie

1 1/2 cup (280 grams) frozen Peaches
2 medium bananas
10 oz Voskos Greek Yogurt, plain, non-fat
2 packets of Stevia
1 TB Pure Vanilla Extract
2 TB Chai Seeds
2 scoops Biochem Vanilla Whey Protein (Buy It Here)
2 scoops (16 grams) Amazing Grass Green Super Food drink powder (Buy It Here)
1 cup filtered water

Blend together.  Makes 3 servings.

300 calories, 44 g carbs, 4 g fat, 27 g protein, 8 g fiber

How to get back on the wagon? Book a resort vacation in Vegas!

Why oh why is this so hard for me this time around? I can make it a few days, maybe a week, then for some reason my resolve slips and I end up tail spinning into diet nightmares.  I won't give up! I will keep trying!  I do feel lame coming back...yet again...on day 1.  But I refuse to quit.  So lame as I may be, I am back on day 1 again of Medifast.

Shane (my wonderful husband) and I had a heart to heart talk this weekend.  We are both at our heaviest points and last time we did Medifast together, we knew were were at an emergency point.  Well this time is strange....we are actually more active now but at our heaviest.  Running after 3 small kids all the time forces us to be active, but by night we are beat.  Back hurts, knees hurt...generally just wiped out!  At our size it is an emergency to lose this weight! We need to be healthy for ourselves but also for my sweet nephews that we are caring for.  We have big plans for this summer! We are going to put in a new patio and finally, after 2 years, have a new sod installed so we can have a nice grassy retreat in our backyard. We want to enjoy BBQs (on plan!) with friends and play with the nephews in the grass! We want to relax on the patio at night, sipping iced tea.  But when my butt is so big it is hard to fit in a chair, this is just a dream.

This leads me to wonder....why am I letting my weight stand in front of the life I want?  So what did Shane and I do to motivate us?  We booked a vacation in Las Vegas at a resort this September!  From today until September first, that is 32 weeks exactly!!  I won't be where I want to be in 32 weeks, but I can be a heck of a lot closer!

Week 1 is a wash

I am overdue for a post and update, so sorry! Thank you to everyone who help me accountable to posting.  Well, week 1 was not so good.  I ended up breaking even because I went off plan.  I have a million excuses but the bottom line is this is a new week and I am back on track!

Good news?  My microwave broke and we were able to get a new microwave much sooner then expected!

Medifast is MUCH easier with a microwave I have to say.  Not having a microwave is part of why I went off plan, as lame as that is.

I am working on a big thing for my blog that I hope to have ready this month. Lean & Green recipes that can easily convert to feed the entire family! It had always been just my hubby & I but in September my 3 nephews (16 mons, 3 & 5) came to live with me. I realized how hard & tempting it is to cook my Lean & Green and cook a meal for them. I want to just make the same thing, but be able to convert it for the hubby & kiddos. Look for a new recipe section with family friendly recipes!
