Low Carb Chocolate Protein Cookies (No Bake)

Ingredients:
2/3 cup no sugar added Applesauce
1 cup peanut butter
1/3 cup Flax Seed Meal
1 cup Rolled Oats
1 cup Diced Raw Almonds
8 scoops (1 cup) Biochem Sports 100% Whey Protein Powder Chocolate Fudge
4 scoops (1/2 cup) Biochem Sports 100% Whey Protein Powder Vanilla

Directions:
Mix flax seed meal, rolled oats, almonds and whey protein together. Added applesauce and peanut butter. I used my Kitchenaid Stand Mixer with the paddle attachement. Mix together. Weigh the dough on a scale and divide the weight by 22. Mine weigh 35 grams per cookie. Measure & roll each cookie. Press flat on wax paper. Keep refrigerated.

Makes 22 cookies.

Chocolate Peanut Butter Dessert


Ingredients:
~1 scoop Biochem Chocolate Fudge Protein powder
~1 TB PB2 (Powdered Peanut Butter - check it out here)
~1/2 cup 2% Cottage Cheese
~2 TB Unsweetened Coconut Milk (or Almond milk)
~1 tsp of Splenda

Directions:
Mix together in Magic Bullet until creamy. Serve chilled. Makes 1 serving.
This can be eaten as a meal replacement on the 5 and 1 diet!

Low Carb Focaccia Bread


 Ingredients:
1/3 cup of olive oil
1 tsp salt
1 TB Splenda
1 TB baking powder
1.25 cups egg substitute
2 cups of flax seed meal




Directions:

Preheat the oven to 350 degrees F.

Mix wet ingredients together. Add dry ingredients & mix well. Pour into a greased 11 x 7 pan. Bake for 20 minutes. Serves 18.

Added Blog Content and Health Coach!

I wanted to let everyone know that I have added a lot of content to my blog about my use of alternative products while on the 5 and 1 plan. I have received so many questions about what products I am using, I am going to keep this blog updated with my current plan and how my weight loss is going.

So far, I am spending far less money and really enjoying the added variety. There are still some Medifast products I really enjoy (like the brownies!) and plan to continue to use. I have been very happy with switching to alternative products, but it sure has been a lot of work to find suitable replacements. This is also why I am sharing this info with everyone.

Road Trip, Going Off Plan & Pictures!

My trip to Salt Lake City was amazing! I got to spend the weekend with my awesome family, many of who hadn't seen me since I started losing weight or very early in my journey. I got so many compliments, my self esteem is sky high now! I am starting to believe that I am getting smaller!

I stayed on plan the entire time when I was there BUT on Tuesday when I was driving back it didn't work out too well. I ended up eating extra meals, drinking a low carb monster and almost started smoking again! I quit smoking over a year ago, so I am glad I just messed up my food for the day and left the cigarettes alone! Easier to get back on plan then it is to quit smoking again.

So yesterday I ate, 1 shake, 4 servings of protein chips (my replacement for puffs), ate 2 servings of bars, 1.5 oz bag of wasabi almonds, 2 low fat mozzarella cheese sticks and 2 eggs with orange bell peppers & onions. All in all I think I ate about 1400 calories, 60 grams of fat and 110 carbs, and 125 grams protein. Ugh! I felt so sick yesterday and feel blah today too. Trying to drink lots of water and I am back on plan today.

Why did I go off plan? I didn't get nearly enough sleep before I headed back from Salt Lake to Denver. I tried the Monster Energy drink to stay more alert and it made me feel high! I would advise staying far, far, far away from those. I never realized how compromised my will power is when I let myself get too tired. Good sleep is crucial to a good diet. Lesson learned.

The good news is that I did lose 6.4 lbs for week 2! My mom's scale matches my scale! That brings me to 72.4 lbs lost since 9/20/10!

Week 2 Weigh In, Road Trip & Babies Galore!!

I decided to drive from Denver to Salt Lake City to visit my mom and see all my nieces & nephews. It took me about 9 hours and I stayed totally on my 5/1 plan for the road trip. This is a victory for me because I get the munchies on road trips! I started my day with a Cookies & Cream protein shake, had 1/2 a protein bar and 2 bags of protein chips during the drive. I did also eat 2 cheese sticks during the trip.

On my week 2 weigh in day, I was down to 237.6! Granted I used my mom's scale, but she says it matches her doctor's scale, so hopefully it isn't too far off from mine. Assuming it is correct, that brings me to 6.4 lbs lost in 2 weeks. Not too shabby if I do saw so myself! Also, NSV - my size 20s are falling off of me and it is time to move into the 18s! Most XL shirts fit me, some are a little snug in the arms.

My mom started the 5/1 plan today using the alternate products and she did great! Funny thing - she did almost add a scoop of baby formula to her coffee instead of Whey powder, but she figured it out just in time. It was pretty funny! I wonder how many carbs are in baby formula....just kidding!

Week 1 Weigh In, New Products, New Recipe & Valentine!

Yesterday (Sunday) I had my first week weigh in being on my new plan.  I am a bit disappointed that I didn't have a loss.  I am at 0 lost, 0 gained.  There are a few reasons this may be:
1. Maybe my plan just won't work, but I really don't think so. I am still following the 5/1 just using different products.
2. My carb intake has gone down on many days from what it was.  I am not sure if this will negatively impact weight loss, but that has changed.
3. My calorie intake has gone up as much as 200 calories per day.  I am still under 1200 every day and given the amount of exercise I am doing, I plan to keep this.
4. That special time of the month.  Yeah, it is here and this has been a huge culprit for me and others for a 0 or low weight loss week.
5. I am gaining muscles! I have been able to increase the weight on all my strength training exercises by 10-15 lbs.  So that is proof right there that I am gaining muscle!  This is a huge victory for me & is enough to not really mind the 0 pound week.

I have to say that if I was still on Medifast and had a 0 pound week, I would be crushed.  I felt a lot of pressure on Medifast to lose weight as fast as possible due to the expense. This is why I didn't do strength training earlier.  I didn't want to do anything that would make me stay on Medifast longer.  Now that I have greatly reduced the amount I am spending on meal replacements products, I am much more at ease to focus on NSV (non-scale victories) like being able to increase the weight I am lifting.  Without the added financial pressure, I am realizing that this is about my overall health, not just losing weight.  When I get to goal, I want to have a strong, fit body.  That is really most important.

New Products Updates
I found the Seapoint Farms Dry Roasted Edamame at my local grocery store.  I have to say that the jury is still out on them.  I do not like the Lightly Salted flavor, but it might be good if I put a few in a salad.  The Wasabi ones are okay, the flavor is pretty good.  I will be eating those for lunch today as a meal, so we will see.

My new favorite thing to eat is Chocolate Peanut Butter Yogurt  I think I am addicted to PB2!

The Great Experiment

Hey all!  I wanted to let everyone know that I am not going to be using Medifast products for the next month.  I want to try an experiment where I follow the 5/1 plan but use alternative products. I am doing this to try to save money. I am estimating this will cost about $100 a month plus the cost for Lean and Green meals.

Since this blog is dedicated to Medifast, I started a new blog dedicated to my experiment.  All the details on my menus, progress & products are found on the new blog:

Here are the details of the plan that I am going to try for a month, starting on 2/6/2011.

Diet:
Calories: under 1200
Carbs: under 100 g
Fat: under 30 g
Protein: over 100 g
I am still going to follow the 5/1 plan.
(Eating 5 meal replacements a day and 1 Lean & Green meal)

Exercise:
Monday: 25 mins cardio, 15 mins upper body strength training, 5 mins stretching.
Tuesday: 25 mins cardio, 15 mins lower body & core strength training, 5 mins stretching.
Wednesday: 25 mins cardio, 15 mins upper body strength training, 5 mins stretching.
Thursday: 25 mins cardio, 15 mins lower body & core strength training, 5 mins stretching.
Friday: 25 mins cardio, 15 mins upper body strength training, 5 mins stretching.

Supplements:
Kirkland Daily Multivitamin
Vitamin C: 1000 mg
Jarrow Formulas Fiber Perfect
Fish Oil: 2400 mg (I have taken this for 6 months)
Vitamin D3: 2000 IU (I have taken this for 6 months)

Broccoli Bake #2

6 cups of broccoli (4 Green)
4 cups of egg beaters (2 Leanest)
8 oz of low fat mozzarella cheese (3-6 g of fat per ounce) (2 Lean)

Preheat oven to 350 degrees.

In a food processor add broccoli, egg beaters and cheese. Puree. Spray 2 quart casserole dish with non-stick spray. Pour in mixture.

Bake at 350 degrees for 45 minutes.

This recipe makes 4 servings. Each serving is 3 green servings and 1 lean serving.
Calories: 300, Fat 9.5g, Carbs 12.5g, Protein 42g
