Raspberry Cheesecake Brownie

*This recipe was modified on 2/06/2013 to reflect the most current Medifast guidelines*

1 packet MF Brownies
1 packet MF Chocolate Chip Pancakes (regular pancakes would work too)
1 TB Raspberry Sugar Free Syrup (1 condiment)
5 TB Water
1 TB low fat cream cheese (1 condiment)
1 packet Splenda (1 condiment)

Mix together the MF Brownie and MF Chocolate Chip Pancake mixes. Add 1 teaspoon of sugar free raspberry and 5 TB of water. Mix together and pour into 2 ramekins. Microwave for 2 1/2 minutes. Take out of ramekin and let cool for about 5 minutes. Mix 1 TB of cream cheese and 1 packet of Splenda together for a topping. Divide cream cheese topping and spread evenly on top of each cake. Enjoy!

This entire recipe makes 2 servings.  Each serving is 1 Medifast meals, 1.5 condiments.

I like this idea...and will try it when I get my next shipment with pancakes. I might SWIRL the cream cheese through the brownies before cooking. Will let you know how that turns out!

I have made this before only added about 1/8 tsp baking soda (to rise) and I have substituted PB2 for the raspberry flavor. yummy.

I tried this last week and, OMG, is it good! I love the little chocolate chips in the cake. This will be something I will make after my MF journey is over!

what is a ramekin?
A ramekin is a small stoneware dish you can use in the oven: http://www.google.com/products/catalog?q=ramekin&oe=utf-8&rls=org.mozilla:en-US:official&client=firefox-a&um=1&hl=en&biw=1015&bih=499&bav=on.2,or.&ie=UTF-8&cid=17283103872338452155&sa=X&ei=dr52Tc6fIITkrAGl9pmECg&ved=0CH8Q8wIwAw#

Good evening Cody Jo! I was running low on my chocolate chip pancake mixes so I thought I'd try this recipe with the spiced pancakes. During the holidays my family makes pumpkin cookies with chocolate chips in them, that was my inspiration. Anyways, I used both packets, 5 tbsp. water, 1 tsp. sf vanilla syrup, 1/8 tsp. baking soda...mixed together, microwaved for 2 minutes and 15 seconds, and topped them with cream cheese. OMG, they are delish!!! If you try them, please let me know what you think : )

What is PB2 ?

PB2 is ground peanuts. You can use it as peanut butter by adding water. 90% of the fat is removed.

I made these this afternoon. They are fabulous!! I had one this afternoon and it is really hard to leave the other one till tonight. I put just a drop of the sugar free syrup in the cream cheese. Mostly just gave it a pretty hint of pink, not really any flavor. Thank you for this great recipe.
