Pudding Pies

This is a modified version of this recipe from defragged.com


2 Packets of Medifast Maple and Brown Sugar Oatmeal (any flavor can be used)
1 Packet of Medifast Banana Pudding (any flavor can be used)
1 Packet of Splenda
1/2 tsp Baking Soda

Preheat oven to 350 degrees.

Mix together oatmeal, Splenda and baking soda. Slowly add water until dough just sticks together. I used about 1/2 cup of water, but it can vary.

Divide the dough into 4 balls and press into a muffin tin. I used a silicone muffin pan, so I didn't need non-stick spray. If you are using a regular muffin tin, spray with Pam first.

I get asked often about my muffin pan.  It is a metal pan with snap in silicone liner muffin cups.  It is the best of both worlds!  You can buy it  on Amazon for $17.99 + $5.49 shipping.


Bake at 350 degrees for 12 minutes. Remove from muffin pan and completely cool.

Using the shaker jar, mix 4 oz of water with the banana pudding. Spoon into each oatmeal cup. Refrigerate for about 30 minutes for it to set.


The 4 pies counts as 3 Medifast meals and 2 condiments.

Banana pudding is one of my favorites. I think I am going to have to invest in one of those silicone muffin pans. They came out very nicely!
And you can drizzle the top of those with the walden farms sf marshmellow dip or chocolate syrup. I'm going to have to try those!!!!! :)

I love them! Please explain how four of them add up to three mf meals....... One for each meal......what do u do with the fourth one? How u divide it? Does it break? Pls explain....lol

The number of Medifast meals are determined by the number of meals you use in the recipe. Since 3 Medifast packets were used, this is 3 meals. If you used a bigger muffin tin, you could make these into 3 pies.

Personally, I eat 3 Medifast meals at work so I brought 4 pies and ate one every 2 hours or so. It is a nice way to stretch out meals throughout the day, especially for hungry days.
