Chicken Alfredo Pizza


1 cup riced cauliflower (2 green)
1/4 cup Great Value Egg Whites (1/4 lean)
3/4 cup Part Skim Mozzarella Cheese (3/4 lean - 6 grams fat/oz cheese used)
1 ounce Grilled Chicken (1/6 lean)
2 TB Walden Farms Alfredo Sauce
1 tsp Italian seasoning


This is 1.04 lean, 2 green, and 3 condiments. You could add 1 serving of spinach or other maybe asparagus to make this a full Lean and Green meal.

How to "rice" cauliflower:
1. Using a food processor, attach the grater.
2. Pulse the steamed cauliflower through the grater.
Result:

Mix riced cauliflower with 1/2 cup of cheese, 1/4 cup egg whites and 1 tsp of Italian seasoning.

Shape the mixture in the shape of a pizza on the silicone mat or parchment paper. Using the mat or parchment paper should help prevent the crust from sticking.

Bake at 400 for 18-20 minutes. Remove from oven at top with 2 TB of Walden Farms Alfredo sauce, 1/4 cup cheese and 1 oz of shredded chicken.
