Week 1 is a wash

I am overdue for a post and update, so sorry! Thank you to everyone who help me accountable to posting.  Well, week 1 was not so good.  I ended up breaking even because I went off plan.  I have a million excuses but the bottom line is this is a new week and I am back on track!

Good news?  My microwave broke and we were able to get a new microwave much sooner then expected!

Medifast is MUCH easier with a microwave I have to say.  Not having a microwave is part of why I went off plan, as lame as that is.

I am working on a big thing for my blog that I hope to have ready this month. Lean & Green recipes that can easily convert to feed the entire family! It had always been just my hubby & I but in September my 3 nephews (16 mons, 3 & 5) came to live with me. I realized how hard & tempting it is to cook my Lean & Green and cook a meal for them. I want to just make the same thing, but be able to convert it for the hubby & kiddos. Look for a new recipe section with family friendly recipes!

One of mine and my mom's favorite "family friendly" medifast safe recipes was the Root Beer pulled pork. Super easy in the crockpot, and than when it came time to eat just leave the BBQ on the side, don't mix it in. That way you can measure out a "condiment" amount, and the kids and hubby can pile on as much as they want and can still have the bun. Served up with salads and say some oven fries for them.

All I can say is THANK YOU THANK YOU THANK YOU! Feeding a family of 5 has been a challenge for me as someone who has just started TSFL (One week in) and am frustrated looking a recipes that are for single servings. I don't have time to make two separate meals, and so far I have to make dinner for the family and I get to eat a chicken breast and broccoli as the easy meal for me.

I so admire your willingness to take on three little ones! I am so happy to see you are back on plan. I love your blog and look forward to reading more wonderful things! I have seven kids still at home so I understand the challenges of feeding them and staying true to a healthy lifestyle. I'm behind you all the way!!!
