"Never Again Will I Buy Enchilada Sauce" Recipe

My husband has some dental work done a couple of days ago and can only eat soft food until tomorrow. I think he is getting tired of overly done mac & cheese and cottage cheese, so I decided to make Enchiladas.  Typically I use canned Enchilada sauce, but I wanted to make this dinner special and really blow him away with my culinary genius! I decided that I would try making homemade Enchilada Sauce.

WOW it is amazing!!!!!!!  I will NEVER, EVER, EVER buy Enchilada Sauce again.

"Never Again Will I Buy Enchilada Sauce" Recipe

1/4 cup canola oil
2 TB flour
2 TB chili powder
8 oz tomato sauce
1.5 cups chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon garlic salt
1/2 teaspoon onion powder

In a skillet, heat oil. Whisk in flour and chili powder.  Cook at medium until lightly browned.  Gradually whisk in tomato sauce, broth, cumin, garlic & onion powder.  Simmer for 10 minutes or until slightly thickened.

Serve immediately, store in the refrigerator for up to 3 days.

Yield: About 2 1/2 cups
Prep Time: 15 min Cook Time: 20 min
