As of today I am at 222.2 pounds! My brother asked me what my goal weight was. Jokingly, I told him it was 6 pounds, 7 ounces - my original weight. That got me thinking, what is my goal? I have been intentionally maintaining my weight in the 220s. I have been here for about 6 months, lasting the holidays with no weight gain. I am feeling confident that I do know how to maintain my weight. The last 3 months I have maintained and trending toward the lower end of 220s, without Phentermine. I tapered off all medications just after the new year. The entire point of Phentermine/Topomax combo was to bring me down 100 pounds, which I have now lost and maintained without any medication or diet plan, just instinctual eating, for the past 3 months. <br />

I am feeling that I am ready to make some key and purposeful decisions about how I want to eat, care for my body, mind and soul. <br />

Wow it has been a long time since I blogged!<br />

Lots of cool things in life....<br />I got my dream job back in September at Amazon Web Services as a Technical Account Manager. Hard work and a much bigger challenge than I realized, totally worth it.<br />
<br />

When I focused on my emotional health, the weight loss came along. I did have some medical help, by way of medication. I have taken medication before but did not focus on my emotional health and the weight came off.<br />
<br />
February 2017 I was back to 335 lbs, just broke it off with a boyfriend.<br />
My doctor prescribed me Phentermine and a low dose of Topamax.<br />
2 months ago, I tapered myself off of both drugs.<br />
I have maintained my weight at 225 lbs since - 2 months so far.<br />
<br />
I am not sure if I want to lose more weight right now or pursue my dream of being a Plus Size Model. I am only 5'6" and most Plus Size Models are 5'8" or taller. <br />
<br />
My rules around food are as follows:<br />
1. Listen to my body and give it what it needs<br />
2. Eat ethically grown/sourced food when possible<br />
3. I can eat out anytime I want, if I plan the meal with a friend<br />
<br />
I have never let myself live without strict rules and self hatred when the rules were broken. Now I try to pay attention to how decadent a dessert is and truly me in the moment. <br />

I was asked by several people to put together a menu of how I ate for the past 10 days to lose 20 lbs. I went ahead included 11 days. Let me say that when I started I had been trying to due the Medifast diet which is very low calorie, moderate carb and low fat. This was a bit of a transition period towards low carb and high fat. Please do not take this as suggestions of what you should eat, only record of what I ate. I was not perfect by any means and made mistakes with food.<br />
<br />
My goal is to have a max of 1800 calories with 20% carbs, 30% protein and 50% fat. Some days I did horrible and some says I did great. I am averaging pretty close, as you can see below in the averages for the 11 days. <br />

Here is my first progress photo. When I bought this dress it was too snug and I wore a tank over it. Now it fits perfect! Not bad for 10 days eating low carb!! My macronutrients are targeted to 20% carbs, 30% protein and 50% fat.<br />

Life has been very good lately! Work is going well, candle business is thriving and I have been having a blast with my nephews living here. I am happy to report that my brother and his wife are all setup at their new home and are ready for the boys to come back and live with them. My time (10 months) as full-time auntie to the wonderful Rylan (5), Aerion (3) and Phoenix (22 months) is nearing an end in just a couple of short weeks. I am very excited for my brother and his wife and their family, but I am sad because those boys have been my joy for the past 10 months.</div>

So this is a time of change for me. The reality is that I have spent so much time taking care of other people the past 10 months, I have not been taking care of myself. Diet habits and exercise have slipped big time. My initial reaction was to jump back on Medifast, which is a great diet. But I don't want a diet, I want to move to the next phase of Cody...if that makes sense. I lost 75 lbs in about 6 months on Medifast and didn't even work out. I was thinner but I was not fit yet. I live in the most beautiful state, Colorado, and I have never even climbed a 14'er or went skiing. Even smaller, fitness held me back. Secretly, I even long to do crossfit. So this next stage of myself isn't focused on just being thinner, however that will be an awesome benefit, but I want to be an active and healthy person. This will allow me to serve my God better, be a better wife, be a better employee and overall be a better version of myself. </div>

One of the fruits of the spirit is self control and this is something that I have not been manifesting - and very obviously. I truly believe that God won't tell you to do something without giving you the tools to do it. Sometimes he puts the right person in your life at the right time to help you with your journey. My time at Take Shape for Life has shown me how important it is to have the support of a Health Coach. Since I want an overall wellness approach, I am starting with a wellness coach. I will be given a goal for something diet related, exercise related and one mental related. Here are my first 3 goals I was given to start with:</div>

2. I want you to stretch in the morning after you wake up, and again at night before you go to bed. You don't have to spend 20 minutes stretching, just stretch as much as you can. You're not going to believe how great you feel after a week of this.<br />
3. Time to change your perception of yourself. From now on, you are an active and healthy person who is just recovering from some down time. Envision yourself being one of those athletic types when you work out. Take the stairs and never the elevator, and feel and enjoy each step. You are no longer someone who is struggling. You are someone with goals that you WILL reach, because you know you can. Because you are young and have the power to transform yourself.</div>

I also got a FitBit One, so I will be using that as motivation to be more active. FitBit sets a goal of 10 flights a day of stairs and I FAR exceed that. Guess that is natural when you live in a 2 story house with 3 kids and your office is in the basement. Though I don't take nearly as many steps as I should. I work in IT so most of my day is spent in front of the computer. Candle making is no big caloric expenditure either. But I am working on small steps. I am very much an all or nothing type person, so I am so tempted to want to go all workout crazy and do everything that I eventually want to be doing. But I am trusting my wellness coach and when it is time for me to add to my goals. I have a strong tendency to want to control EVERYTHING and over-engineer plans. It is very odd and somewhat freeing to just follow someone else's plan and not add my own spin to it all. </div>

Mix all together and just add enough water so it has a cake batter consistency. Bake for 20 minutes at 350. This makes 4 meals, but my heart muffin pan makes 6 muffins....so it make be best to eat 1 and 1/2 muffin for each meal.<br />

This counts as 4 Medifast meals, 2 healthy fats, 2 condiments, 1/4 leanest.<br />

So, I am back off Medifast and am going to be focusing on eating more whole, organic foods. My husband and I want to have a baby, so we are looking into a great "Fertility Diet" that mainly focuses on eating organic foods, limiting dairy, limiting soy and eating whole foods.<br />

I am doing a 10 Day Smoothie Challenge, as a way to ease myself in.<br />

Also, I discovered a great drink by Evolution Fresh called Essential Greens with Lime Juice. Normally they are about $5 a bottle, but I got them on special at my grocery store for only $2.29! It is a cold pressed juice, not from concentrate. Seems like a great way to help get in more veggies. That is until I buy a juicer!<br />

Book a resort vacation in Vegas!Why oh why is this so hard for me this time around? I can make it a few days, maybe a week, then for some reason my resolve slips and I end up tail spinning into diet nightmares. I won't give up! I will keep trying! I do feel lame coming back...yet again...on day 1. But I refuse to quit. So lame as I may be, I am back on day 1 again of Medifast.<br />

Shane (my wonderful husband) and I had a heart to heart talk this weekend. We are both at our heaviest points and last time we did Medifast together, we knew were were at an emergency point. Well this time is strange....we are actually more active now but at our heaviest. Running after 3 small kids all the time forces us to be active, but by night we are beat. Back hurts, knees hurt...generally just wiped out! At our size it is an emergency to lose this weight! We need to be healthy for ourselves but also for my sweet nephews that we are caring for. We have big plans for this summer! We are going to put in a new patio and finally, after 2 years, have a new sod installed so we can have a nice grassy retreat in our backyard. We want to enjoy BBQs (on plan!) with friends and play with the nephews in the grass! We want to relax on the patio at night, sipping iced tea. But when my butt is so big it is hard to fit in a chair, this is just a dream. <br />
<br />
This leads me to wonder....why am I letting my weight stand in front of the life I want? So what did Shane and I do to motivate us? We booked a vacation in Las Vegas at a resort this September! From today until September first, that is 32 weeks exactly!! I won't be where I want to be in 32 weeks, but I can be a heck of a lot closer!<br />

It had always been just my hubby & I but in September my 3 nephews (16 mons, 3 & 5) came to live with me. I realized how hard & tempting it is to cook my Lean & Green and cook a meal for them. As of 12/26/2013 I am back on the Medifast diet. This now marks 3 times I have gained "the weight". And this third time I am starting 10 lbs heavier then my original starting weight. I thought I would be sadder about it, but I am really not. I have a strange sense of peace about it all. I know what works to lose weight, I know why I regained weight. I just have to make up my mind that I am worth doing it again over. If I have said it once, I have said it a thousand times...no diet, surgery, workout plan or change any other change of lifestyle works if you go back to your old habits & way of eating. If you eat again in the same way that made you fat, guess what? You will get fat again.</div>

In September of 2010, I started Medifast for the first time. I was doing Medifast 5&1 diet alone, with the support of Take Shape for Life. From September 2010 until March 2011, I had lost 75 lbs. I started at 310 lbs and ended, still 60 lbs from goal at 235 lbs.</div>

<b>Round 2 </b></div>

By March of 2012, I had regained 55 lbs, weighing in at 290 lbs. Being very scared of hitting the big 3, I started Medifast again in March 2012. By September of 2012, I had lost 60 lbs, bringing my lowest weight to 230 lbs. Still 55 lbs from goal.</div>

In December 2013, I crossed the line into the big 3 again. As of Christmas, I weigh 320 lbs. That is 10 lbs higher then my Round 1 starting weight. I am now 145 lbs above my goal weight. I have to start over </div>

1.5 cups Cauliflower (cooked)<br />
1/2 cup of Eggbeaters<br />
<br />
Preheat oven to 375 degrees.<br />
<br />
I used frozen Cauliflower for this and cooked it in the microwave using the directions on the bag.<br />
Squeeze out any water by squeezing using a paper towel. <br />
Using a food processor, blend together the cauliflower and Egg Beaters. <br />
Line cookie sheet with parchment paper or foil/parchment combo paper.<br />
Scoop out to make 4 tortillas.<br />
Bake for 15 minutes, then flip and bake for another 10 minutes.<br />

Preheat oven to 350 degrees.<br />

Cooked frozen cauliflower in microwave per the directions on the bag. Add cooked cauliflower to food processor. Add 6 eggs. Blend until smooth. Weigh on food scale and divide by 6.<br />

Pan fry ground beef and add Montreal steak seasoning. Weigh on food scale and divide by 6.<br />
<br />
Cook portabello mushrooms on countertop grill for about 5-7 minutes. Dice mushrooms. Weigh on food scale and divide by 6.<br />
<br />
Drain can of green beans in strainer. Weigh on food scale and divide by 6.<br />
<br />
Mix 1 packet of Medifast gravy with 1 cup of water. Weigh on food scale and divide by 6.<br />
<br />
To assemble:<br />
It is easiest to put each dish on a food scale and weigh it as you go using your measurements from above. Add 2 oz of ground beef to oven safe dish. Add 1/6 of diced portobello mushrooms to each dish. Add 1/6 of green beans to each dish. Add 1/6 of gravy to each dish. Top with 1/6 of cauliflower/egg mixture.<br />
<br />
Bake in oven for 20-25 minutes or until cauliflower topping is golden.<br />
<br />
Add .66 oz of moderate fat cheese to each and bake for another 5 minutes or until the cheese is melted.<br />
<br />
Let cool for about 10-15 minutes.<br />
<br />
To reheat, bake in 350 degree oven for about 10-15 minutes.<br />
<br />
Each dish counts for 1 lean, 1.5 green and 3 condiments.<br />

Preheat oven to 350. Using a Magic Bullet or small food processor, blend the dry soup until it is smooth. Add 2 TB of water and blend until well mixed. Roll out dough thin and cut with your favorite cookie cutter. Take the left over dough, roll again and cut again with cookie cutter until all dough is formed. Bake for 15 minutes. Let cool.<br />

This recipe makes 1 Medifast meal. In the pictures, I was able to yield 3 crackers per meal. This will vary depending on the size of your cookie cutter and the thickness of your dough.<br />
